5, 4-ounce chicken breasts
Cooking Spray
1 ½ - 2 Granny Smith apples, cored and diced
1 Red Delicious apple, peeled and diced
1 small to medium fresh red pepper, seeded and diced
½ cup corn, frozen
2 tablespoons + 1 ½ teaspoons fresh cilantro, chopped
2 tablespoons + 1 ½ teaspoons cider vinegar
2 tablespoons + 1 ½ teaspoons lemon juice
1 tablespoon + ¾ teaspoons maple syrup
1⅛ teaspoons sugar
⅓ teaspoon kosher salt
Method
- Coat chicken on both sides with cooking spray. Cook chicken until internal temperature reaches 165º F and juices run clear, approximately 4-6 minutes on each side.
- Combine apples, red pepper, corn, cilantro, cider vinegar, lemon juice, maple syrup, sugar and salt.
- Use ¼ cup apple corn relish on each chicken breast.
Substitutions
- Substitute pork for the chicken.
- Substitute fresh or canned corn for the frozen corn.
